Description
Everything is Okay Pink is made from 90% Sangiovese and 10% Colombard. For this special project, one ton of Sangiovese was fermented carbonically for a week, then topped off with direct-pressed Colombard. The Sangiovese berries floated for a few days in the Colombard juice, a process sometimes called flotación. After separating the juices, the Sangiovese was pressed to create this vibrant wine. It has a floral, fruity profile, with the tension of a rosé and a subtle grip reminiscent of red wine.
