Description
Fond Cyprès Cyprès de Toi Rouge is a natural red wine from the Corbières region in Languedoc-Roussillon, France. Crafted from a blend of 60% Syrah, 30% Grenache Noir, and 10% Carignan, the grapes are organically and biodynamically farmed on calcareous soils in Escales. The vineyards benefit from the cooling “vent Cers” winds from the northwest and the humid Mediterranean “vent Marin” from the east. Harvested by hand, the grapes undergo spontaneous fermentation with native yeasts in concrete vats for three weeks. The wine is then aged in stainless steel tanks and bottled unfined, unfiltered.
