Frantz Saumon, a former Canadian forester who founded his domaine in 2002, ferments all wines with indigenous yeasts in underground cellars carved into the soft rock. The ancestral method captures residual sugars mid-fermentation, creating natural effervescence without dosage or added sulfites.
