The vineyard’s limestone-rich soils and favorable microclimate contribute to the wine’s complexity and elegance. Cossard employs organic and biodynamic farming practices, emphasizing minimal intervention. The hand-harvested grapes undergo whole-bunch fermentation with native yeasts, followed by aging in Georgian qvevris—traditional clay vessels—that enhance the wine’s purity and vibrancy.
