From younger vines across Langhe’s diverse terroirs—limestone, clay, and sand soils at high elevations—the estate crafts this revolutionary yet ancestral wine. Twenty percent whole clusters undergo spontaneous fermentation in stainless steel, with temperature control halting fermentation to preserve slight residual sugar and natural effervescence. Aged in autoclaves to maintain gentle fizz, this organic-farmed Nebbiolo represents the Vajra family’s “time machine wine,” reconnecting modern drinkers with pre-Barolo traditions while showcasing Piedmont’s cooler mountain climate.
