The winemakers at Fattoria di Gratena prioritize traditional methods, fermenting the grapes with indigenous yeasts in outdoor stainless steel tanks to leverage natural diurnal temperature shifts. After fermentation, the wine matures for nine months in a combination of new and old tonneaux barrels.
