Heaven Hill 27 Year Old is an ultra-rare, 94.7 Proof (47.35% ABV) limited-edition barrel proof bourbon released in late 2018. This technical expression is a masterwork of long-term maturation, comprised of only 41 barrels produced in 1989 and 1990. These barrels were aged on the first and second floors of the distillery’s Bardstown rickhouses, where the cooler temperatures prevented excessive evaporation and kept the proof from climbing too high, allowing the spirit to age for nearly three decades without becoming over-oaked.
Produced by the Heaven Hill Distillery, this small batch utilizes the traditional bourbon mash bill of 78% corn, 10% rye, and 12% malted barley. Despite being “Barrel Proof,” the age and specific warehouse placement resulted in a lower natural proof, preserving the delicate chemical balance between the spirit and the wood. The resulting profile is defined by an extraordinary concentration of dried fruit, pipe tobacco, and ancient oak esters, delivering a sophisticated, velvety mouthfeel and a resonant finish characteristic of the most prestigious extra-aged Kentucky stocks.
