Description
Henri Chauvet Contre-Nature 2023 comes from old Gamay vines rooted in volcanic soils of decomposed basalt covered by fine black earth in the village of Boudes, Auvergne. Henri Chauvet, who trained alongside Thierry Allemand in Cornas before settling in Auvergne in 2021, whole-bunch ferments the grapes spontaneously for approximately 15 days in stainless steel tanks. Henri Chauvet Contre-Nature ages on its lees in tank before bottling without clarification or filtration. Henri Chauvet adds zero sulfites to Contre-Nature, making it one of his most uncompromising expressions of volcanic Auvergnat Gamay. Organic farming throughout.
