Description
Hervé Souhaut La Souteronne is a natural Gamay from Domaine Romaneaux-Destezet in Arlebosc, Northern Ardèche. Made from 80-to-100-year-old vines planted on granite soils just below the Hermitage hillside, the wine undergoes whole-cluster fermentation with semi-carbonic maceration at low temperatures. Hand-harvested grapes are fermented in wooden tanks with indigenous yeasts for extended maceration, then aged on fine lees in neutral oak casks for eight months. Bottled unfiltered and unfined with minimal sulfites at 25mg/L.
