Description
A collaborative bottling from Jean-Yves Péron’s I Vicini project, using Favorita sourced from organically farmed sites in northern Italy and vinified in Savoie. Hand-harvested fruit sees a short skin contact before fermenting with native yeasts in neutral vessels, then ages in barrel without fining or filtration and minimal added sulfur. The style is fresh but lightly structured, with subtle grip and a clean mineral line shaped by both the grape and the low-intervention approach.
