Description
De Toute Beauté is a natural Vin de France rouge representing Jean-François Ganevat’s innovative approach to blending traditional and ancient varieties. Composed of 70% Gamay sourced from different terroirs, particularly 80-year-old vines from Fleurie, the wine is completed with 30% forgotten Jura grape varieties including Petit Béclan, Gros Béclan, Geusche, Argant, Peurion, Isabelle, and Enfariné. The grapes undergo semi-carbonic maceration at cool temperatures (12-14°C) in traditional truncated conical vats using indigenous yeasts. Aged without fining, filtration, or sulfur additions, this cuvée embodies biodynamic winemaking principles established since the estate’s conversion in 2006.
