Description
Jean-François Ganevat’s “J’en Veux Encore” is a natural Vin de France rouge crafted from Gamay sourced from Fleurie in Beaujolais, blended with select Jura grape varieties including Pinot Noir. This négociant cuvée undergoes semi-carbonic maceration at low temperatures in truncated conical vats using indigenous yeasts. The wine is vinified without sulfur addition, unfined and unfiltered, following biodynamic principles. Ganevat, representing the 14th generation of vignerons in Rotalier, sources grapes from like-minded friends who share his natural winemaking philosophy. The terroir combines Beaujolais granite with Jura’s diverse limestone soils.
