Jean-Pierre Robinot L’Ange Vin presses the grapes directly into old oak barrels where spontaneous fermentation unfolds over months—sometimes years—with indigenous yeasts. The wine ages sur lie for approximately eighteen months before bottling without fining, filtration, or added sulfites.
