Description
La Cabotte Côtes du Rhône Rouge Colline 2023 is a dry red wine made from Grenache and Syrah by Marie-Pierre d’Ardhuy-Plumet and Éric Plumet at Domaine la Cabotte on the Massif d’Uchaux plateau in Mondragon, southern Rhône. The 30-hectare estate is Demeter-certified biodynamic, farming a single block of vines at 165 metres on chalky limestone and gravelly loam soils. Grapes are destemmed, fermented with indigenous yeasts, and pumped over twice daily during fermentation. After a six to seven-day post-fermentation maceration, La Cabotte Côtes du Rhône Rouge Colline 2023 ages in stainless steel before bottling unfined and unfiltered. 14% ABV.
