La Staffa’s Mai Sentito is a sparkling white wine (Pet-Nat) made from Verdicchio with a small addition of Trebbiano grapes. “Mai Sentito translates to “Never Heard Of,” reflecting its unique character in the winery’s lineup. This “wine is produced using the ancestral method (refermented in bottle with its yeasts). A mineral and saline quality adds complexity, while the wine finishes with a lively acidity, making it ideal as an aperitif or paired with seafood and light, fried foods.
