David Rothschild’s Los Paisanos team farms these parcels using regenerative methods, harvesting by hand before combining the varieties in open-top fermenters. Fully destemmed, the grapes undergo daily cap submersion for one week before pressing. Las Vivas Mountain Cuvée 2022 then ages twelve months in neutral oak barrels. The approach is minimal—no additions, no manipulation—letting the volcanic Sonoma Mountain terroir define the wine’s personality.
