Description
Le Batossay Dynamitage is made from Gamay grapes grown in a vineyard with loam and limestone soil, which Baptiste biodynamically farms. These vines, planted in 1996, were originally used by Baptiste’s father, Olivier, for his Yamag cuvée. The winemaking process involves whole cluster fermentation followed by aging in barriques. The wine is made without fining or filtering and no sulfur dioxide (SO2) is added during any stage of the production.
