Description
Le Batossay Pied! Chenin Blanc is made from Chenin Blanc grapes, originating from the Pied Flonc vineyard. These old vines, planted in 1955 on schist soil, are biodynamically managed by Baptiste. The vinification process involves direct pressing of the grapes, followed by a 2-year aging period in barriques, which includes some exposure to oxidation. This production method does not involve fining, filtering, or the addition of sulfur. The wine is complex and structured.
