Description
A biodynamic white from mountain parcels in Roussillon, grown on decomposed granite soils between 350 and 600 meters. The varieties are harvested and pressed separately, then fermented with native yeasts and aged by component in used oak vessels before the final blend rests in stainless steel. Long maturation gives the wine depth and texture, while the altitude keeps it lifted and fresh. Layered, savory, and mineral, with citrus, orchard fruit, herbs, and a rounded finish.
