Les Caves Cathédrales Mr. & Mrs. Theo T.O. 2023 is a dry red wine produced by Laurent Clapier at his biodynamic estate in Saint-Restitut, in the Grignan-les-Adhémar appellation of the southern Rhône Valley. The blend is based on Grenache and Syrah from Demeter-certified biodynamic vineyards, with vines ranging from 8 to 21 years of age growing on clay-limestone soils. Each variety is vinified separately in stainless steel before blending and aging in concrete vessels. Les Caves Cathédrales Mr. & Mrs. Theo T.O. 2023 is the estate’s signature red cuvée, bottled at 13% ABV.
