The Macallan Harmony Collection Fine Cacao is a 80 Proof (40% ABV) limited-release expression from The Macallan Distillery, developed in collaboration with pastry chef Jordi Roca of El Celler de Can Roca. This Highland Single Malt is defined by a technical maturation process involving a specific marriage of sherry-seasoned European oak casks and sherry-seasoned American oak casks.
This wood-forward approach is engineered to mirror the flavor profiles of fine chocolate, emphasizing roasted cacao and milk chocolate notes derived from the sherry-seasoned staves. After maturation in Speyside’s temperate climate, the spirit achieves a harmonious equilibrium between the spicy, tannic structure of the European oak and the creamy, vanilla-driven sweetness of the American barrels, presented in sustainable packaging made from repurposed cacao husks.
