The Macallan Harmony Collection Rich Cacao 88 Proof (44% ABV) represents the inaugural release in a series exploring sustainable packaging and innovative flavor profiles. This Highland Single Malt was developed through a technical collaboration between Whisky Maker Polly Logan and world-renowned pastry chef Jordi Roca of El Celler de Can Roca. The spirit is aged in a specific combination of European and American sherry-seasoned oak casks, selected to isolate and amplify the deep chocolate notes inherent in the Macallan new-make spirit.
The presentation is distinguished by its eco-conscious packaging, featuring a fully recyclable and biodegradable gift box crafted from discarded husks of cacao pods. This 2021 release is defined by a dense, oily mouthfeel and a technical profile that bridges the gap between traditional Speyside maturation and modern culinary exploration.
