This food-friendly creation is made from the grape variety Macabeo. This variety is popular in several countries where it generally goes by different names. In Spain, it is best known for its role in the blended sparkling wine Cava and sometimes heavily oaked whites of the Rioja region (where it is known as Viura). Merce Carme has created a refreshing, fruit-forward take on this versatile grape. This wine is light and acidic, with a delicious essence of each fruit flavor. These grapes come from a warm Mediterranean climate where light oceanic influence moderated temperatures and preserved the fruit’s vivacious acidity. Stainless steel fermentation at cool temperatures maintained varietal flavors and an enticing texture.
