Description
O2Y Catimini is crafted from Aligoté grapes sourced from Meursault in Burgundy, France. The region’s limestone-rich soils and cool climate contribute to the grape’s vibrant acidity and minerality. The winemaking process involves dividing the grapes into two equal parts: one undergoes direct pressing to extract fresh, citrusy notes, while the other two-week maceration develops a fine tannic structure. After fermentation, the two varieties are blended, resulting in a robust yet fresh wine. Catimini is produced without adding sulfur.
