Description
O2Y L’Embellie is a white wine crafted from the Savagnin grape, sourced from Montigny-les-Arsures in the Jura region of France. The vineyards are characterized by clay and limestone soils, contributing to the wine’s mineral complexity. The 2020 vintage experienced a warm growing season, leading to ripe fruit flavors. The grapes are farmed organically by Domaine du Pélican, ensuring sustainable viticultural practices. Yves Roy carries out vinification, involving direct pressing of the grapes and fermentation in tonneau (large barrels). The wine undergoes an extended aging period of 24 months in these barrels, with regular topping up to prevent oxidation, resulting in a powerful and spicy expression of Savagnin.
