Description
Orsi Vigneto San Vito Sui Lieviti is a natural sparkling wine from Federico Orsi’s biodynamic estate in Valsamoggia, Bologna Hills, Emilia-Romagna. Made from 100% Pignoletto (Grechetto Gentile) grapes grown on clay, sand, and limestone soils at 200 meters elevation. The wine undergoes spontaneous fermentation in concrete tanks with variable skin maceration, ages six months on lees, then receives fresh must before bottle refermentation. Never disgorged, this traditional método ancestrale sparkling wine contains minimal sulfites and remains cloudy with active lees.
