Description
Pheasant’s Tears crafts their Tsitska from this ancient western Georgian variety, sourced from Imereti region vineyards where the grape has thrived for centuries on elevated mountainous terrain. The 2023 vintage underwent a shorter maceration than typical Georgian orange wines, with destemming followed by just three days on skins before fermentation and aging in stainless steel tanks. This minimal intervention approach preserves Tsitska’s characteristic high acidity and aromatic delicacy. The wine is bottled unfined and unfiltered with little to no sulfur added, maintaining the winery’s commitment to natural winemaking while showcasing this late-ripening variety’s inherent freshness and vitality.
