Description
Named after the winemaker’s spirited cat, Éric Texier Chat Fou 2022 blends approximately 50% Grenache with 30% Cinsault and 20% Clairette from organically farmed, south-facing vineyards on granite and gneiss soils in Saint-Julien-en-Saint-Alban, Ardèche. Vines average 30 years old. Éric Texier partially destems the fruit, co-fermenting the varieties with indigenous yeasts in open concrete tanks. A short four-to-five-day maceration extracts color and flavor without heaviness. Chat Fou ages 12 to 18 months in concrete on fine lees, then bottles unfined and unfiltered with minimal sulfur. The result is a fresh, light “vin de bistro” style red.
