Still Austin Tanager Second Edition is a 107.5 Proof (53.75% ABV) Distillery Exclusive bourbon produced at the Still Austin Whiskey Co. distillery. This 2025 release features a unique composite of 53% blue corn, 25% red corn, and 22% white corn bourbons, each matured for at least six years. Master Blender Nancy Fraley utilized the ancient French Petites Eaux technique, where high-aged stocks are proofed using a 50-proof “fortified water” that was itself barrel-matured for an additional year.

This process integrates deep wood sugars without the aggressive heat of higher-proof bottlings. The result is a lush and heavy texture with a profile of cherries jubilee, butterscotch, and roasted applewood, followed by a savory finish of pink peppercorn and soft leather.
