To make the Thicket 2016 Shiraz Australian winemaking expert Peter Leske joined forces with two Masters of Wine: Giles Cooke and Fergal Tynan (there are only 356 in the world). Their desire was to produce a straightforward take on a classic Aussie wine style. Harvested at night when the temperatures are cooler, and then aged for nine months in French Oak barrels the Shiraz has a solid structure, silky mouthfeel, and an excellent balance between tannins and fruit. The light touches of smoke and cocoa from the oak barrels allows this Shiraz to pair as easily with dessert as it can with a steak.
