Dalbana represents Tre Monti’s playful interpretation of Albana through ancestral winemaking traditions. From organic-certified vineyards on Imola’s clay-centric hills at 100 meters elevation, September-harvested Albana grapes are picked slightly early to preserve natural acidity and aromatics. Following the metodo ancestrale, the wine undergoes primary fermentation in stainless steel with brief skin contact for added texture. Bottled with residual sugars and active yeasts, secondary fermentation creates natural effervescence in bottle. This minimal-intervention approach, employing indigenous yeasts and minimal sulfur additions, connects modern drinkers to Romagna’s historic “mosto” wine tradition. The result offers an organic, unfiltered alternative to conventional Prosecco.
