Description
100% Pinot Noir
Unique fermentation using Japanese sake yeast, allowing for a longer, colder fermentation process (30-40 days). Aged on fine lees in stainless steel tanks for approximately 1 year, with weekly stirring (bâtonnage). Bright garnet color. The nose offers red cherry, strawberry, cassis, and blueberry with hints of rose, leather, and granite. The palate is fresh, juicy, and complex with a mineral, slightly herbal finish. 13.5% ABV
