Wonderwerk Lite Werk Yuzu is a low-alcohol piquette made from re-fermented grape pomace from direct-pressed white wines for 3-7 days, then blended with 30% finished wine including Riesling and Verdejo. Produced in Gilroy, California by winemakers Issamu Kamide and Andrew Lardy, this innovative collaboration with YUZUCO infuses Japanese and California yuzu peel into the blend. The base wine undergoes native yeast fermentation followed by light bottle re-fermentation with Champagne yeast starter. At 7% ABV, this organic, unfined, and unfiltered sparkling wine represents cutting-edge natural winemaking techniques.
