This limited release is distilled from a unique, high-rye mash bill of 55% corn, 35% rye, and 10% malted barley, featuring grains grown exclusively on the Omlin Family Farm in Quincy, Washington. The distillate is matured for eight years in custom-made barrels featuring staves that were open-air seasoned for 24 months before being heavily toasted and lightly charred.
This expression is aged in private barrel houses in Central Washington, where extreme temperature cycles drive the spirit deep into the oak. Technical specs highlight a dense, fruit-forward profile of dark cherry and dried apricot, balanced by a significant tannic structure and dark chocolate notes derived from the extended maturation period.
