Description

Domaine de l’Octavin Cherubin is made from 100% Savagnin grapes grown in Arbois, Jura, by winemaker Alice Bouvot. This vin jaune-style wine undergoes seven years of aging “sous voile” (under a veil of naturally occurring flor yeast) in old oak barrels without topping up, creating oxidative development. The grapes come from biodynamic vineyards on marl and limestone soils characteristic of Jura’s terroir. At 12.7% alcohol, this wine represents Alice’s interpretation of the traditional vin jaune method without official AOC certification.
