Our last vintage of Cabernet Sauvignon from Scissor Kick Cellars was a knockout at the 2021 Winemaker Challenge, coming home with a Gold Medal and 91 points. With bombastic fruit flavor and energetic oak influence, this new vintage also seems destined for glory. South Australia is the powerhouse winegrowing region of the country. It’s survival of the fittest here, where growing conditions vary greatly. From desert-like climates found in the region’s inland vineyards to maritime influences in the south, a grape must be able to adapt to the unpredictable climatic punches this region may throw. But there is a reason Cabernet Sauvignon is known as the “king of grapes.” This hardy variety can adapt to a wide range of climates and will exhibit distinct and desirable characteristics of each.
