Jean-Yves Péron’s Champ Levat 2022 is a natural red wine crafted from 100% Mondeuse grapes, sourced from old vines averaging 130 years in age. These vines are situated in the Savoie region of France, specifically in vineyards characterized by clay and limestone soils. The grapes are hand-harvested and undergo a two-month maceration, followed by spontaneous fermentation in neutral oak barrels using indigenous yeasts. The wine is aged for 12 months in neutral barrels and is bottled without fining, filtration, or added sulfites, adhering to organic and biodynamic farming practices.
