“Waiting for the Rain”—the cuvée name references a scorching summer that left Auvergne’s vineyards parched. Henri Chauvet En Attendant la Pluie 2023 is 100% Pinot Noir sourced from a renowned organic grower in Savigny-lès-Beaune, Burgundy. Henri Chauvet whole-bunch macerates the fruit for 10 to 12 days in a combination of wooden casks and stainless steel, then ages the wine nine months in used 228-liter barrels followed by an additional nine months in bottle before release. Henri Chauvet adds only 1 g/HL of sulfites prior to bottling. No fining or filtration.
