This technical assembly features a marriage of three distinct recipes: a 15-year-old OESK (20% rye, baking spice yeast), a 13-year-old OESK (20% rye, delicate fruit yeast), and a 12-year-old OESV. Matured in specialized single-story rackhouses, this blend is unique for utilizing exclusively “E” (low-rye) mash bill components to highlight a softer, more corn-forward structural sweetness.
The resulting chemical profile is defined by vibrant notes of warm apricot, red berries, and rich caramel, which integrate with the delicate baking spices of the “K” strain. The non-chill filtered presentation ensures a lush, oily mouthfeel that carries deep layers of toasted oak and vanilla through a long, elegant finish.
