Description
Ca’ de Noci Kyathos del Poggio Emilia Bianco is a natural sparkling white wine from Emilia-Romagna, Italy, crafted from 100% Spergola, an indigenous grape revived by brothers Alberto and Giovanni Masini. The grapes are grown organically on gravelly limestone soils with gypsum deposits in Quattro Castella. After hand-harvesting, the grapes undergo a 20-day maceration in unglazed terracotta amphorae to extract texture and complexity, followed by spontaneous fermentation with native yeasts. The wine is bottled unfiltered and undergoes a nine-month refermentation in the bottle, creating delicate natural carbonation without added sulfites or dosage.
