The grapes thrive in diverse soils such as clay shale, gravelly loam, and volcanic deposits, reflecting California’s varied terroir. Winemakers Dan Schaaf and Aaron Olson employ minimalist techniques: spontaneous fermentation with native yeasts, aging in neutral oak or stainless steel, and minimal sulfites.
