Description
The name translates to “Of Ash and Soul”—a fitting tribute to Auvergne’s volcanic origins. Henri Chauvet De Cendre et d’Âme 2023 blends 70% Gamay from the prized Abrupts vineyard at the edge of Boudes village with 30% Pinot Noir from the same parcel that produces Vie Ordinaire. Both components grow on basalt and blue marl soils. Henri Chauvet whole-bunch macerates the grapes for 10 to 12 days in stainless steel, then ages the wine 12 months in used 228-liter barrels followed by six additional months in bottle before release. Only 1.5 g/HL of sulfites added. Organic farming.
