Description
Hervé Souhaut Syrah is a natural wine from Domaine Romaneaux-Destezet in Arlebosc, Northern Ardèche. Made from 100% Syrah grapes from 30-to-80-year-old vines planted on granite soils, the wine undergoes whole-cluster fermentation with semi-carbonic maceration at low temperatures. Hand-harvested grapes are fermented in wooden tanks with indigenous yeasts for extended maceration, then aged on fine lees in neutral oak casks for eight months. Bottled unfiltered and unfined with minimal sulfites at 25mg/L and 13% alcohol.
