Description
Il Ceo Pinot Noir Rosato Pét-Nat is a sparkling rosé produced by Davide Andreatta in the Breganze area of Veneto from organically and biodynamically farmed Pinot Noir and a splash of Merlot. The vineyards grow on volcanic basalt and tufo soils with glacial morainic deposits at 200-300 meters elevation. Il Ceo Pinot Noir Rosato Pét-Nat undergoes separate fermentation with indigenous yeasts in stainless steel before blending. The wine completes secondary fermentation in bottle using the ancestral method, with no disgorging, fining, filtration, or added sulfites at any stage.
