Description
Le Coste Ripazzo Rosso is made using a ripasso technique where white wine grapes—Procanico, Malvasia, Roscetto, Verdello, Petino, and Romanesco—are passed over the pomace of red grapes including Sangiovese, Merlot, and Ciliegiolo. Produced near Lake Bolsena in Gradoli, Lazio, the wine comes from organic and biodynamic vineyards on volcanic soils rich in iron and minerals. Spontaneous fermentation occurs with native yeasts, followed by aging in steel tanks for several months. The wine is unfined, unfiltered, with no added sulfites.
