Description
O2Y Syracuse is crafted from Carignan grapes sourced from Cassagnes, a village at 340 meters altitude between Corbières and the Pyrenees in the Côte Catalanes region of France. Though not certified, the vineyards are farmed biodynamically by Aymeric Paulet of La Vigne Grande. The grapes undergo a direct pressing with a slow, 7-hour press cycle, allowing for the extraction of color and flavor without maceration. Fermentation occurs naturally with indigenous yeasts; the wine is aged in large wooden vats.
