The Wine: Pet Nat d’Eric NV
The wine, produced by Domaine Jean-Louis et Eric Kamm in Dambach-la-Ville, is made from 80% Auxerrois and 20% Pinot Noir grapes from 18-year-old vines grown organically on granite soil. The hand-harvested grapes are destemmed, fermented with indigenous yeast without sulfur, and mature in concrete tanks on the lees. The Auxerrois and Pinot Noir are then blended and bottled to naturally ferment into a sparkling wine without any added sugar, yeast, or sulfur. This unfiltered pet-nat is not disgorged, characterized by a gentle sparkle, floral aromatics, and a zesty palate.
The Producer: Les Vins Pirouettes
Les Vins Pirouettes is a project launched by Christian Binner, that brings affordable natural wines to the table, and at the same time helps organic and biodynamic grape growers in Alsace move away from selling their grapes to cooperatives towards making and bottling natural wines. Each cuvée is made at a young grower’s winery, where they supply the grapes and Christian supplies his 20 years of expertise in making natural wine in Alsace, and of course his marketing and distribution savviness.
