William Heavenhill 1st Edition Signature Barrel Strength Kentucky Straight Bourbon Whiskey is bottled at a cask strength of 127.6 Proof by Heaven Hill Distilleries in Bardstown, Kentucky. Released in 2008 to commemorate founder William Heaven Hill’s 225th birth date, this ultra-rare, gift-shop-only expression consists of a tiny small-batch mingling that yielded only 225 total bottles. The spirit utilizes Heaven Hill’s traditional bourbon mash bill of 78% corn, 10% rye, and 12% malted barley.
It underwent a primary maturation of exactly 225 months (18 years and 9 months) inside fire-charred new American white oak barrels. These barrels rested within the upper floors of Heaven Hill’s open-air, multi-story wooden rickhouses, accelerating intense interaction with the wood. The prolonged exposure to the wood fibers over nearly 19 years without chill filtration extracts deep, heavy oak tannins, dark baker’s chocolate, saddle leather, and highly concentrated caramel molasses.
