This was especially true in California’s 2020 vintage, where an unusually warm winter followed by an early spring led to a hasty start to the growing season. With high summer temperatures, winemakers carefully monitored the natural sugar levels in ripening grapes, mindfully anticipating the ideal time to harvest. Luckily, Cabernet Sauvignon is well suited to both high heat and drought-like conditions with thick skins and deep-diving roots, making it a worthy match for warm weather.
