Description
Novaia Amarone della Valpolicella Classico DOCG Corte Vaona 2017 is produced from Corvina, Corvinone, Rondinella, and other indigenous varieties grown in certified organic vineyards in Marano di Valpolicella. The Vaona family harvests grapes manually in late September from hillside vineyards at 250-400 meters elevation on marly-calcareous soils with basaltic layers. Grapes dry naturally for approximately 100 days in a traditional fruttaio at 400 meters elevation. Novaia ferments the wine in oak truncated-cone vats for at least 30 days at controlled temperature, followed by 24 months aging in wooden barrels and eight months in bottle before release.
